Sweet Chocolate syrup

 For the chocolate syrup :

Ingredients:

- 1 cup (200g) granulated sugar

- 1/2 cup (120ml) water

- 2 tablespoons (30g) unsweetened cocoa powder

- 1 teaspoon vanilla extract (optional)

Gradient:

-     1. Combine sugar and water in a saucepan and heat over medium heat, stirring until sugar dissolves.

-     1. Bring mixture to a simmer and cook for 5 minutes, or until the syrup reaches 230°F (110°C) on a candy thermometer.

-     1. Remove from heat and whisk in cocoa powder until smooth.

-     1. Add vanilla extract, if using.

-     1. Let cool and store in an airtight container in the refrigerator for up to 2 weeks.

Notes:

- If you don't have a candy thermometer, test the syrup by dropping a small amount into a cup of cold water. If it forms a soft ball that flattens when removed from the water, it's ready.

- You can adjust the amount of cocoa powder to your taste, but keep in mind that more cocoa will result in a thicker syrup.

- This syrup is great for ice cream, milkshakes, or as a topping for pancakes or waffles.
