Mango ice cream

 


Here's a simple recipe for mango ice cream:


Ingredients:


- 2 ripe mangos, pureed

- 1 cup granulated sugar

- 1 cup heavy cream

- 1 cup whole milk

- 1 tsp vanilla extract


Instructions:


1. In a medium saucepan, combine the mango puree, sugar, and 1/4 cup of the heavy cream. Heat over medium heat, stirring until the sugar dissolves.

2. In a separate bowl, whisk together the remaining 3/4 cup heavy cream and whole milk.

3. Temper the cream mixture by slowly pouring the warm mango mixture into it, whisking constantly.

4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens slightly and reaches 170°F to 180°F.

5. Remove from heat and stir in the vanilla extract.

6. Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours or overnight.

7. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.

8. Once churned, transfer the ice cream to an airtight container and freeze for at least 2 hours to set.


Note: If you don't have an ice cream maker, you can also freeze the mixture in a shallow metal pan and blend it in a food processor once it's frozen solid, then refreeze until set.
